Ingredients
Yield: 8 snickers
8 Medjool dates, pitted
3 tablespoons natural peanut butter
2 tablespoons dark chocolate chips (70% cacao or higher)
1½ tablespoons unsweetened coconut flakes
1½ tablespoons pumpkin seeds (pepitas)
Instructions
Slice each Medjool date lengthwise and remove the pit. Gently open it up like a small “boat.”
Spoon about ½ teaspoon of peanut butter into the center of each date. Add a few pumpkin seeds, chocolate chips and a pinch of coconut flakes on top.
Enjoy!
Store in the fridge for up to a week or in the freezer for up to a month.
