Wet Ingredients

  • 2 medium ripe bananas, very well mashed (about ¾–1 cup)

  • ½ cup + 2 tbsp water

  • ½ cup whole milk 

  • 3 tbsp melted coconut oil, slightly cooled

  • ⅓ cup pure maple syrup

  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Line a muffin tin, or lightly grease the cups with olive oil using a paper towel.

  2. In a large bowl, whisk together all dry ingredients.

  3. In a separate bowl, mash bananas, then whisk in the remaining wet ingredients.

  4. Add wet ingredients to dry and gently fold until just combined. Do not overmix.

  5. Fold in chocolate chips.

  6. Divide batter evenly among muffin cups and sprinkle tops with remaining chocolate chips, if using.

  7. Bake 25–27 minutes, until set and a toothpick comes out mostly clean.

  8. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.

  9. Store in an airtight container in the fridge for up to 5 days or freeze up to 3 months.
