Healthy Taco Salad with Grass-Fed Beef & Homemade Lime Dressing

This simple taco salad is packed with flavor and ready in just 30 minutes. Using 100% grass-fed ground beef, Siete tortilla chips, fresh avocado, and a homemade lime dressing, it’s a wholesome take on taco night you’ll want on repeat.
Ingredients
Yield: 2 salads
For the Salad:
1 lb 100% grass-fed ground beef
1 packet Siete Taco Seasoning
3 cups spring mix, chopped
½ pint cherry tomatoes, halved (about 1 cup)
1/2 medium onion, diced
1 medium avocado, sliced or cubed
½ cup cheese (cheddar or your favorite), shredded or chopped
1 cup Siete tortilla chips, lightly crushed
For the Dressing:
2 Tbsp extra virgin olive oil
Juice of 1 lime
4 cloves garlic, finely minced or grated
¼ tsp sea salt (or to taste)
Freshly cracked black pepper, to taste
Directions
In a skillet over medium heat, cook the ground beef until browned. Add the taco seasoning packet plus water according to package instructions. Stir and simmer for 2–3 minutes.
Chop the spring mix, halve cherry tomatoes, dice the onion, and slice the avocado.
In a small bowl or jar, whisk olive oil, lime juice, garlic, salt, and pepper until blended.
Divide spring mix between two bowls. Top with taco beef, cherry tomatoes, onion, avocado, cheese, and crushed tortilla chips.
Drizzle with the lime dressing just before eating. Toss gently and enjoy!
