Yield: 9 brownies
1 cup mashed sweet potato (about 1 medium baked sweet potato)
2 eggs
1/3 cup nut butter (mixed nut, almond, peanut, etc.)
¼ cup maple syrup or honey
¼ cup cacao powder
½ tsp baking powder
1/2 cup cup 70%+ dark chocolate chips (plus additional for the top, if you would like)
Instructions
Preheat oven to 350°F. Line an 8x8 baking dish with parchment paper.
In a large bowl, mash the sweet potato until smooth.
Whisk in eggs, almond butter, and maple syrup.
Stir in cacao powder and baking powder. Mix until well combined.
Fold in chocolate chips.
Spread batter into prepared pan, smooth the top, and add chocolate chips to the top, if using.
Bake 25–30 minutes. Let cool before slicing.
