Ingredients
Yield: about 6 cookies
1 ½ cups unsweetened shredded coconut
1 cup soft Medjool dates, pitted
1 Tbsp any nut butter (I like Kirkland Mixed Nut Butter)
½ cup dark chocolate, melted (70% cacao or higher)
Directions
Toast the coconut. Heat shredded coconut in a pan over medium-low heat, stirring often, for 3–6 minutes until lightly golden and fragrant.
Make the base. In a food processor (or by hand), blend toasted coconut, dates, and nut butter until a sticky batter forms.
Shape the cookies. Form into cookie rounds and place on a parchment-lined baking sheet. (For the classic Samoa look, you can poke a small hole in the center.)
Add chocolate. Melt dark chocolate. Dip the bottom of each cookie into the chocolate, then drizzle extra over the tops.
Set + enjoy. Freeze for 5-10 minutes for the chocolate to harden. Store in an airtight container in the fridge for up to 1 week, or freeze for up to 1 month. Let thaw a few minutes before enjoying.
