Directions

  2. Make the base. In a food processor (or by hand), blend toasted coconut, dates, and nut butter until a sticky batter forms.

  3. Shape the cookies. Form into cookie rounds and place on a parchment-lined baking sheet. (For the classic Samoa look, you can poke a small hole in the center.)

  4. Add chocolate. Melt dark chocolate. Dip the bottom of each cookie into the chocolate, then drizzle extra over the tops.

  5. Set + enjoy. Freeze for 5-10 minutes for the chocolate to harden. Store in an airtight container in the fridge for up to 1 week, or freeze for up to 1 month. Let thaw a few minutes before enjoying.
