Directions

  2. In a food processor (or by hand), blend toasted coconut, dates, and nut butter until a sticky batter forms.

  3. Form into cookie rounds and place on a parchment-lined baking sheet. (For the classic Samoa look, you can poke a small hole in the center.)

  4. Melt dark chocolate chips by microwaving and stirring in 30-second intervals. You can add a teaspoon of coconut oil to the chocolate to help with the consistency. Dip the bottom of each cookie into the chocolate, then drizzle extra over the tops.
