Ingredients
Yield: about 6 cookies
1 ½ cups unsweetened shredded coconut
1 cup soft Medjool dates, pitted
1/4 cup dark chocolate chips, melted (70% cacao or higher - I like the brand Hu)
Directions
Heat shredded coconut in a pan over medium-low heat, stirring often, for 3–6 minutes until lightly golden and fragrant.
In a food processor (or by hand), combine toasted coconut and dates until a sticky mixture forms.
Form into cookie rounds and place on a parchment-lined baking sheet. (For the classic Samoa look, you can poke a small hole in the center.) Freeze the cookies for 10–15 minutes until firm.
After 10-15 minutes, melt dark chocolate chips by microwaving and stirring in 30-second intervals. You can add a teaspoon of coconut oil to the chocolate to help with the consistency. Dip the bottom of each cookie into the chocolate, then drizzle extra over the tops.
Freeze again for at least 10 minutes for the chocolate to harden or refrigerate until the chocolate has hardened. Store in an airtight container in the fridge for up to 1 week, or freeze for up to 1 month.
