4-Ingredient Chocolate Walnut Date Bars

Another date dessert recipe! Dates are a more nutrient-dense way to sweeten foods than refined sugar. Dates provide fiber, potassium, magnesium, copper, antioxidants, and small amounts of other micronutrients, which you don’t find in most refined sugars.

These 4-ingredient chocolate walnut date bars are simple, naturally sweet, and taste just like a candy bar.

4-Ingredient Chocolate Walnut Date Bars

Yield:

8 bars

Ingredients:

  • 1 1/2 cups walnuts, toasted

  • 2 cups Medjool dates, pitted

  • 1 teaspoon vanilla bean paste

  • 1/2 cup dark chocolate, melted

Instructions:

  1. Preheat oven to 300°F. Spread the walnuts on a baking sheet and toast for 12 minutes.

  2. Add the toasted walnuts to a food processor and pulse until finely ground.

  3. Add the dates and vanilla bean paste. Blend until well combined and the mixture begins to stick together.

  4. Line a 9x5-inch loaf pan with parchment paper. Press the walnut-date mixture evenly into the bottom of the pan.

  5. Melt the dark chocolate in the microwave in 30-second increments, stirring between each, until smooth. Spread evenly over the walnut-date mixture.

  6. Refrigerate for about 2 hours, or until firm.

  7. Remove from the pan, slice into bars, and enjoy!
